Don't laugh, but I've been looking for this sauce for 20 years. Sort of. Years ago, my wife and I stumbled on a Thai chili sauce at one particular market in New York. It was called "Gold Label Yellow Chilli Sauce", made by Chuew Huad Co. of Mueang Chonburi, Thailand. When we realized how special it was, we went back and basically bought the rest of their inventory. Used it on everything, and gave a ton to family and friends. Then it was gone. Never saw it again, and since then, we've tried umpteen different sauces and never found anything like it. Until this Three Mountains Brand Yellow Sriracha. I don't know what's unique about yellow Thai chilis, but to me, the vegetal taste of the peppers themselves comes forward. It reminds you that a pepper is a fruit. You get that to some extent with a freshly opened jar of Huy Fong's Sambal Oelek, too, but this is a subtle, versatile sauce that's delicious on just about everything. Even if you already have plenty of hot sauces, this one belongs on your shelf.
