Excellent quality, very soft flour. I use this to make Gluten Free Hamburger buns (from AnInstantOnTheLips) just like the recipe calls for. I've made them before without the amaranth, (bc it was out of stock) but they are right, the buns DO taste better with it. 1/4 cup per batch (makes 8) is all it takes. I make these regularly so I pre mix the dry ingredients and store in jars, making baking day a breeze.
