Yacon syrup is extracted from the root of a yacon plant, native to the Andes mountains. It's free of refined sugars, and the carbs that it does have are prebiotic and healthful fructooligosaccharides. If you aren't up on your scientific terms, this translates into yacon syrup having 1/3 the calories of sugar. Better still, fructans feed our friendly gut bacteria which can contribute to a healthy immune system and help you feel full longer. Yacon is also high in antioxidants and potassium. Our yacon-sweetened chocolate has only 3 ingredients: yacon (a vegetable), cacao paste, and cacao butter. Yippee for yacon!
