I've enjoyed the year or two that I've experimented with inulin. I like using it as a meat tenderizer and need to experiment with using it as an alternative sweetener more. I don't have a microwave so it is hard to soften this once it gets hard though.

I learned about inulin from Azure and I love using it to tenderize meat dishes. I still need to experiment with using it as a sweetener. I love that Azure packages it's products in a variety of sizes and I trust the cleanliness of their warehouse.
