Black lentils have a rich, nutty flavor and are high in protein, fiber, calcium, iron, and potassium. They are loaded with anthocyanin, an antioxidant found in dark purple and blue foods. We love how versatile black lentils are -- they hold their shape in cooking and in salads (thanks to their skin being thicker than in red or brown varieties) but can also be pureed for a smooth, creamy consistency in soups and stews, dips and pastes. They have an earthly and mild flavor, and easily absorb flavors from spices, herbs, and vinegars. Lentils are a great choice for quick meals because they can cook to tender consistency in just 20 minutes. Lentil stew is a quick, hot, nutritious weekday meal, and we also recommend lentils in tacos, tex-mex casseroles, and burgers. Another easy way to enjoy them is heaped on top of baked sweet potatoes with sour cream. Or use them as a base to make a legume-based dinner bowl! These haven't hit the stovetop yet, but they are in the pantry jars and ready to go. They were clean as a whistle right out of the bag and exactly as pictured. I noticed that my bag wasn't the only package of these coming off from the truck. These are going to be a hit!

My absolute favorite lentil. Soaking for an hour or so reduces the cooking time. A gentle boil for about 30 minutes is all they need if you like your lentils with a slight bite. I add a scoop to just about everything.
