Product Description
Lentils are a delicious addition to any pantry, but what sets these French Green Lentils apart from Azures other lentils is their slightly darker green color and smaller size. French green lentils are about 1/3 the size of a standard green lentils with a nutty flavor and generally hold their shape when cooked.
The health benefits of lentils and other legumes are well documented. Many long-term studies have shown that they protect your heart, stabilize your blood sugar, guard against colon cancer and provide an important source of vitamins, minerals, protein and fiber.
When you compare the facts about fiber content in foods, legumes lead the way. Men need at least 30 to 38g of fiber each day. Women need at least 20 to 25g. Cook using 3 cups of liquid (water, or stock of your choice) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double, or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. Cook time for whole lentils is typically 15-20 minutes.
