Amazing!! I made a chiffon cake using 75% of this unbleached pastry flour and 25% Swan's Down cake flour. The cake came out soft and tender, I really think using 100% of the pastry flour would result in excellent cake :)

I love this flour! I freeze it for a week and then store it in my pantry. I make my brownie mix with it. I use it like an all purpose flour. I will be keeping this in stock in my pantry.

Makes great biscuits. I did find our it is not good to use making sourdough, just not enough gluten to aid in the bread structure. I willuse for baking some sweets though.
