We do an annual beach camping trip every summer that requires a hike in so no coolers for us. The last couple years I brought a mishmash of food including the Mountain House meals. However, after last summer, I decided I couldn't take any more mountain house meals. They taste decent but they are expensive and loaded with sodium. I decided this was the year I would dehydrate all my own food and boy am I glad I did! I tried several recipes from this book including, Bacon, eggs and grits, the breakfast casserole, lazy lasagna, vegetable chow mein, turkey chili, corn chowder and the African stew. None of the dishes tasted bad but the lasagna, chili and breakfast casserole were the real standouts. I did add some bacon to the casserole and additional veggies in my lasagna. I also dehydrated everything a bit longer than suggested in the book. As Yaffe said, its really difficult to over dry things. I found it really helpful after the dish came to a boil, to place the pot into a cozy (we used reflectix insulation from home depot and made our own pot cozies) and then let it sit for an additional 10-15 min. Everything came out pretty much perfectly re-hydrated. I will definitely be using this for future camping trips (both backpacking and car camping) and cant wait to try more recipes.
