When I decided to try my hand at making Chocoflan, I followed a recipe that called for dark cocoa powder. Having no experience with using dark cocoa, I arbitrarily decided on Modern Mountain's product. I do not regret that decision. Since Modern Mountain's is the only dark cocoa powder I've ever used, I cannot compare it to other dark cocoa powders, but I can say that my cake came out rich, super chocolatey and very, very delicious, receiving unanimous and enthusiastic approval from my family. I look forward to trying this cocoa in other recipes that call for unsweetened cocoa powder, as I found it's flavor to be superior to other natural (not dark) cocoa powders I've used. UPDATE: I recently used this product to make Alton Brown's chocolate ice cream recipe, and it turned out to be the best, most chocolaty chocolate ice cream I'ver ever had.
