I just used Bob's Red Mill organic rolled oats to make my version of Irish brown bread.In the 1600s, Irish bakers soaked oats in buttermilk to create what was known as porridge bread. This hearty bread was later improved by adding a combination of whole wheat and white flour to the oats.Bob's Whole Wheat Pastry Flour is my flour of choice for the bread. I have used it with Quaker Oats, store brand oats, and McCain's Quick Oatmeal. Bob's is superior to all these products. Its taste is nutty and slightly sweet. When soaked in buttermilk for 40 minutes prior to baking, the oats create a substantial bread that is not dry or crumbly, with a chewy crust.This bread is a feast in itself. It tastes wonderful toasted and can be stored in the freezer with no loss of flavor or texture.
