I LOVE cornbread and I like it with a strong cornmeal taste, vs. the flour. So, I wanted a quality medium grind vs. a fine grind to make the corn taste more pronounced. This was it. Plus, the recipe on the bag was excellent. My hubby and I loved the cornbread. There are several cornbread recipes out there, the one on Alberto's Cornmeal (fine grind) I've used for years and at least two from Bob's Red Mill. But the recipe on this Bob's Red Mill medium grind is a bit different, calling for a good portion of buttermilk and requiring that the cornmeal soak in it for 10 minutes, but I have to say it created an excellent cornbread. If you love cornbread like I do, try this medium grind - I think you'll love it.
