I have always used traditional Masa Harina flour from La Marqueta to make my tamales, and have been satisfied. Then it occurred to me to see if anyone made organic masa. I was happy to see Bob's Red Mill who I love and trust had a version! Well although it costs about ten times as much as the traditional style, I will never go back! This masa takes a little bit more finesse to get the right texture, so be prepared to play around with your fat and liquid amounts, but OMG the flavor just knocks it out of the park!!!! The tamales have never tasted this incredibly delicious. Just get it, and you will be so completely happy. I'm looking forward to making my own tortillas next. This masa is so incredibly delicious.
