On a visit to the Dordogne area of France, many years ago, i saw walnut orchards. In the gift shops, Huile de Noix was available - for astronomical prices! I guess I was young and poor back then, but nevertheless it registered with me that this was something very special. So I was delighted to learn, on a PBS program about agriculture in California, that walnut oil is now being produced here. Trader Joe's carried it once, but I had not seen it for a while, until I found it again on-line. it has a delicate, nutty flavor, and is lighter than olive oil. I use it in my home-made citrus salad dressing.
