Nothing better to carmelize onions. With skinless chickens all around, this is a welcomed treasure.

Easy, 4-ingredient recipe: 1/2 jar of schmaltz, 1.25 lbs. chicken livers, 2 small yellow onions, 3 hardboiled eggs. Saut chopped onions in fat; remove from pan. Next, saut livers with S P. Pulse all in Cuisinart until finely chopped. Perfect chopped liver! Refrigerate remaining schmaltz.

Using this mostly to put a sear on boneless, skinless chicken breasts and then making pan gravy with the fond and canned chicken broth w/ a bit of flour. Much better flavor than searing in oil or butter. No parve or kosher symbols, though.

This Schmalz is excellent. Often I do not get enough fat from making chicken soup for even two batches of matzo balls, so this little jar comes in handy. The quality is excellent.
