I have only used it for honey bread recently, but it turned out well once I figured out how to adjust the other ingredients to account for the almond flour's inability to rise. I don't know how airtight it is, my bag has one of those squishy zippers on it like Epsom salt bags have. It smells very fresh though! Also, the flavor is great. I'm gonna try it in a new mix I'm making for fried chicken. I'm a Southerner, so this no grain diet is difficult. Ha!
