For those of us on low-carbohydrate diets, this is a great alternative to regular wheat flour. It acts and tastes about the same as regular flour, keeps for a long time (in the fridge if opened), and is used in the same proportions as regular flour. It is at a reasonable price, although more expensive than flour.

I have used this flour in several recipes including shortbread cookies (a King Arthur website recipe) and Almond pancakes a recipe from the web.The shortbread cookies just melt in your mouth. I see the Blue Diamond website has some very tempting recipes as well.The taste of this flour is superb.

I loved how fast it arrived, it comes in a good sized bag. My only wish is that the resealable bag closed easier, other than that this almond flour is great. I made a delicious almond cake with it.

I have bought this almond flour a few times and it always seems to come packaged well. The sealing part is more like a velcro type which seems to work for the purpose. The flour has been fresh for me both times as well. It's ground well and I use it to bake muffins which come out great.
