I have used sweet brown rice for many years. But I don't cook it up like regular rice . I grind it into flour and add it to my sourdough because it gives it a nice flavor and a moist texture. I make both bread and waffles with the sourdough. I add maybe 1/8 to 1/4 compared to the whole wheat and rye that I also use . I also use the sweet brown rice flour to cook into a porridge, then cool and use in making kimchi . I mix the porridge with some fresh ginger juice and mild red pepper powder , then mix it in with the other kimchi ingredients. I think it adds a great flavor to the kimchi and maybe it helps the kimchi last longer too because I still have fresh kimchi in the refrigerator that I made last year and it is still good enough to eat. I know traditionally I believe sweet rice is used when it is cooked and then pounded to make mochi but I have never tried that. Enjoy !
