Texture is pretty good. All Gluten free tends to end up a bit cakey, but this isn't really bread, it's cake, so it's fine. I've been known the substitute 1/2 c of honey for 1/2 c of water, and it makes the coloring darker, and adds a little to cook time, but the flavor is something else. Also nice too, if you have some leftover corn on the cob from your BBQ, cut off the kernels and add to your cake. Like I said, even non-Gluten Free people have liked the recipe, have asked for my corn bread, so that tells you a lot.
