I had been using an Italian brand of instant yeast that I was very happy with, but for budgetary reasons I wanted to try the SAF. It came highly recommended by the King Arthur Baking company, so since it was a 1/4 of the price of my usual yeast I figured I'd try it. OMG, it's so good. It performed the same during the proofing, but I got an amazing oven spring, and the flavor is gorgeous.
