With instant yeast there is no need to proof the yeast you just add the granules to liquid and sugar and add in the flour. As long as the yeast is not expired you are not likely to encounter any problems.I hate wasting ingredients and I love that this yeast is always easy to access in my refrigerator and freezer. I keep a glass bottle filled with yeast in the refrigerator and keep the rest in a sealed bag in the freezer. In a bread recipe I made recently I used one tablespoon and it was perfect.I use a variety of yeast products but this one tastes the most like a professional yeast you would find in a bakery. Try it and I think you will be impressed. If you use a bread machine, this yeast is essential.The Rebecca Review
