I have used McCormick and a few other Bay Leaf brands, and I must say that this adds great flavor to chicken and dumplings. I don't use it for the fancy cooking you guys most likely would, but if it helps, I can tell you that these are potent Bay Leafs. If I recall, I needed to use 3, sometimes 4, Bay Leafs with a 6-pound yardbird. Now, I need 2. Most still use one and wonder why they need a chicken base. Anyways, I was impressed, and it saves me a fortune, as I eat Chicken and Dumplings, Split Pea and Dumplings, and now I sometimes use it in Butter Bean soup because I like it so much.I am not a trained chef-I only know country cooking. Some tell me it is only known in Southern Cooking? And, I don't know the words to describe or explain what you are looking for. In my cooking, it needs more lard, salt, pepper, or some spice, Old Bay, all is by taste and smell. The only time I have ever seen/used a measuring cup is for baking. Hopefully, it makes some sense.
