I've been cooking and dutifully adding a bay leaf to everything that asked for it for decades, but I never really understood why. Because I could never detect any real flavor contribution. As far as I could tell, I might have added a dried oak leaf to the same effect. Turns out I was using boring bay leaves. But these?! These are terrific. I finally get it. I ordinarily buy almost all my herbs and spices in bulk from a local organic store, but I will never buy bay leaves from any other source. It matters. A lot. Eyes opened.
