This is the best material for a cake pan. Properly greased, the cake always comes out, undamaged, after resting for 5-10 minutes (always use parchment paper!). I like to use cake strips for assurance, but you don't really need them with these. The edges shouldn't be tough so long as you don't overbake your cake.<br />I originally bought this set to bake a wedding cake, but lately they've been great for the batter that's sometimes leftover when making a batch of cupcakes. Many cupcake recipes leave enough leftover batter for a 6" round. So if you're like me, and baking 8-dozen cupcakes in a single day, it's great to have a set of these on hand. Then you've got a whole layer cake you can freeze for later!<br />Love these so much I also got them in 8", 9", and 10", too.
