I make refrigerator bread. I pull out some each day or every other day and make delicious bread for over a week. Adding this makes it so much much better, not so dense. So glad I started using this.

If you want your 100 homemade whole wheat bread to have the perfect elasticity, softness last for days, look no further! This will get you there! Not saying you cant achieve softness and/or elasticity without this product because you definitely can if you really know what youre doing but it wont last for days it wont be like something fresh from a good bakery. This will deliver great results along with a good quality whole wheat flour. The bread was so good that my family ate a whole loaf as soon as it came out the oven. The other loaf didnt survive longer! They just couldnt resist! This is keeper for all of my whole wheat bread baking from now on. Absolutely no regrets here!

I bought this for baking bread. Rather than buying all purpose and bread flour, I remove 1 tsp of all purpose flour for each cup of flour and replace the tsps of flour with equal amount of wheat gluten. Baked good are much softer

Gluten free' Not for me! I need my bread to have gluten so that it comes out fluffy and airy! Sometimes you need to add vital wheat gluten to the mix so that the bread comes out right. This helps make a better bread.

My whole grain loaves of rye pumpernickel flour rise as well is my simple bread flour white bread recipes. Adding the gluten needed to provide structure and rising ability makes all of my pumpernickel turn out like it was baked by a professional.

I've been using a different brand from the grocery store for years and could no longer find it, probably because of the way gluten has been demonized in the trendy health-issue-du-jour press that is mostly aimed at selling expensive products to people who don't necessarily need them. This is great stuff for improving the texture and keeping qualities of machine made bread. I just add a tablespoon in each batch and it doesn't change the flavor at all but helps you get the kind of bread that would ordinarily require long hand kneading. Gluten occurs naturally when wheat flour is subjected to the yeast and kneading process, but machine made bread usually doesn't develop enough of it without this little boost. My understanding is that gluten is only a problem for people who have a sensitivity, and if that's you, you wouldn't be eating raised wheat bread in any case. For the rest of us, it's what yeast bread making is all about, and I'm happy I found this product.

This is great c for adding loft to heavy whole grain bread. Helps it to rise and be soft and fluffy.

Kinda new to bread making and it took me a while to realize the importance of gluten. I use regular flour not bread flour. Using the gluten makes beautiful bread.

Happy to find; my regular large market does not stock any brand of 'Vital Wheat Gluten'. I wonder if it is because of the bad rap 'gluten ' has? This volume of product is just right for my needs. Boost all purpose flour protein content for sourdough bread.
