I've been using a different brand from the grocery store for years and could no longer find it, probably because of the way gluten has been demonized in the trendy health-issue-du-jour press that is mostly aimed at selling expensive products to people who don't necessarily need them. This is great stuff for improving the texture and keeping qualities of machine made bread. I just add a tablespoon in each batch and it doesn't change the flavor at all but helps you get the kind of bread that would ordinarily require long hand kneading. Gluten occurs naturally when wheat flour is subjected to the yeast and kneading process, but machine made bread usually doesn't develop enough of it without this little boost. My understanding is that gluten is only a problem for people who have a sensitivity, and if that's you, you wouldn't be eating raised wheat bread in any case. For the rest of us, it's what yeast bread making is all about, and I'm happy I found this product.
