I received my 9 X 13 pan quickly and it arrived in perfect shape. I was anxious to give it a try the following day by baking a chocolate cake. I didn't use shortening as recommended to grease the pan bottom, instead I used a light coating of butter on the bottom only of my pan before pouring the cake batter into the pan. Since this pan says it conducts heat very well, I also decided to bake my cake with the least number of minutes recommeded on the package directions. I'm sure glad I chose the lesser time because my cake was done following that time. I allowed the pan and cake to cool for about 40 minutes before I decided to remove the cake from the pan. First, I ran a silicon spatula around the edges of the pan, loosening the cake from the sides. Then I placed a sheet of parchment on the counter, inverted the pan with cake and placed it upon the paper, giving the bottom of the pan a few good taps with my hand and by golly, the cake fell right out into 1 large piece. Never has any baking pan or cake pan allowed me to do that trick. I might add afterward I placed the pan in the sink, ran warm water in it with a splash of dish soap, let it sit for about 15 minutes and washed it out with a wet, soapy paper towel. It looks like new! I'm loving this pan and excited to do more baking with Doughmakers products.
