Instead of having both AP flour and bread flour in my pantry, I can just add about a tablespoon of this vital wheat gluten to 1-2 cups of all purpose to turn it into bread flour. Does not affect the taste of baked goods at all. Only problem I have is that there is no expiration date on the bag I received. The gluten powder doesn't smell stale or anything, so it might be fine for now at least.
