This is a real good brand for freshness. I keep it in the freezer. I don't have room for both bread and all purpose flour, so I use this to make my own bread flour. One TB of gluten per one cup of all purpose flour and you have great bread flour. The gluten gives your bread extra lift and a lighter texture. It's especially important when you are using low gluten, heavy flours like rye and buckwheat. It's my secret to light and fluffy 100 whole wheat bread. Again, one TB per cup of flour. Non GMO is plus.
