I go through a lot of this stuff, fixing it as a dish unto itself and also a part of more complex dishes.As a base, I generally toast this first in some olive oil, add the water [1.25 cups per cup of couscous], add about 1 teaspoon of chicken or beef base, garlic powder, dried onion, and green onion, let it boil for about 7 minutes and then shut it off and let it finish absorbing the water for about another 15 minutes. This way, there is no risk of burning or sticking to the pan. Stir and it's ready to serve or to add to something else. This is a great replacement for rice. Toasting it first gives a nice nuttiness and more bite than just boiling it without toasting it.Nutritionally, this is much better than white rice with about 6 grams of protein per cooked cup and 2 grams of fiber.
