If you want to make Pina-Colada flavored ice cream, THIS is what you need.No alcohol. No glycol. The flavor makes a great ice cream. Here's the recipe: 1 Pint Half Half 1 Pint Heavy Whipping Cream 20 oz can of Pineapple Chucks, drained and crushed 1 tsp Frontier Coconut Flavoring Oil 1/2 Cup or 1 3.4 oz package of Jello Instant Vanilla pudding mix 2 Tbls Rum Extract, No glycol, it leaves a bitter aftertaste. 5 Tbls Sugar I use Monk Fruit, to cut down on the sugar.I use a Cuisinart 2-qt Ice Cream maker.[1] Put Cuisinart container in the deep freeze to chill over night.[2] Drain the pineapple overnight, to get excessive water out.[3] Next day, chop up the pineapple chunks.[4] Mix the fluids with the sweetener until thoroughly dissolved.[5] Assemble the Cuisinart and turn it on.[6] Pour fluids into the mixer.[7] Add pudding and using a fork break up any material the floats on the surface.[8] Add pineapple, coconut oil and rum extract.[9] Run mixer until ice cream becomes firm, but not too hard.[10] Turn off mixer, remove container and dispense ice cream into whatever containers you wish. [NOTE: I use pint-sized plastic with lids. Makes for a great serving for 2.][11] Place lid(s) on container(s) and freeze.This recipe beats Hagan-Daaz Pineapple-Coconut hands down. And at less than one-quarter the price they want for a similar quantitydepending on where you shop and packaging cost.Enjoy.....
